coconut curry chicken

a mild, tasty curry

2 tbsp veg oil
4 boneless skinless chicken breasts cut in bite-sized pieces
1.5 tsp cumin
1 large onion, diced or sliced, however you like it
chopped bell pepper
1 tbsp grated ginger
1 tsp turmeric
1 tsp ground coriander
1 tsp garam masala
1 c chopped (preferably canned tomatoes, reserving the juice
indian chili powder, to taste
1 lemon
can coconut milk, I use the low fat kind
pinch fresh cilantro
rice to serve

trying to remember if i added the ground coriander or forgot it? I did add fresh (ok, frozen cube) cilantro when sauteeeing the veggies and not as a pretty garnish at the end.
mix spices and sprinkle a teeny bit on the chicken, barely any, saute chicken till cooked but not tough. remove from pan.
saute pepper and onion.
add remaining spices and a splash of tomato juice to make a runny paste w/vegetables, cook 1 min, add back in chicken cook 1 more min, add tomatoes, reserving juice just in case it gets too dry (usually wont)
stir and add about half the coconut milk. Simmer about 15 min, adding more coconut milk or tomato juice to get desired consistancy and taste.
