nutritional analysis and a recipe


Tonight we were going to have fish but it had gone bad. So we made gluten-free grilled burgers. We used 1 lb hamburger, mixed it with 2 tbsp-ish steak sauce, handful chopped mushrooms, 1 c or so jasmine rice, 1 bunch green onions chopped, 1/4 red onion chopped 2 eggs to stick it together.

They kind of fell apart on the grill but with some deft spatula maneuvers, they came out whole.

Served with a whole zucchini each- speared, grilled with olive oil, salt, pepper

and a scoop of jasmine rice. Yum!

And onto nutritional analysis.....
yesterday I humbly admit I did not eat healthy. Bacon and hash browns for breakfast, meaty spaghetti for lunch (gluten free though) and enchiladas and french fries for dinner. Oh and some ice cream. Yup. junk.

Upon analyzing the nutritional value of that day's meals (yes I was bored) our high-end RDA values were....

the bad: 102% fat, 121% saturated fat, 70% cholesterol, 79% protein (none plant based)
and good, maybe, 137% niacin, 90% b6, 103% phosphorus, 93% selenium.

Today's meals (can be found in this blog plus some cheerios) analysis is much better....
1227 calories! only 65% fat, 63% saturated fat, 41% cholesterol, 56% carbs, 82% fiber, 287% vitamin A (wow!), 76% vitamin C, iron 93% (good for pregnant me), 70% b6, 131% folate (folic acid another goodie for mommy), and 460%- yes 460, vitamin K.

See it pays to eat healthier.
