After watching an hour of the food network, touring places with fried clams, mac n cheese, fried chicken and other comfort food a gluten-free person has to avoid... I wanted some. Bad. And it wasn't a pregnancy craving because I think anyone watching the food network, during lunch time, really wants what they make on there!
My husband was about to throw in some frozen-ready-made fried whatever into the fryer when he was struck with an idea (as well as the fact he saw me sulking around, not interested in anything in the fridge). Let's make wifey some gluten-free chicken!
Now his recipe isn't exact because he's just not that kind of chef but here goes...
GLUTEN-FREE FRIED CHICKEN NUGGETS
2-3 chicken breasts, cut into "nuggets" about 1x1" or 2x2" in size
1 1/2 cup beer and 1 cup gram flour (aka besan aka chickpea flour)
1 1/2 teaspoon of garlic powder
1/4 teaspoon salt
pinch of pepper (6 grinds on our grinder)
Mix the dry ingredients in medium mixing bowl, add beer as you stir,
Dip chicken in batter.
Fry in fryer at 350 for about 6 minutes until chicken is 160 internally if using white meat.
Towel off grease or put on cooling rack, cool a bit, serve, eat, enjoy.
No proplyene glycol or hydrogenated oil or msg or anything!
In the photo, served with homemade pomme frites...just potatoes, skin left on, cut and fried. Twice. The fattening French way. I didn't claim for this mean to be healthy.... just gluten free and with simple real ingredients.
