Fruit crisp (gluten-free)


I improvised a recipe of sorts and made gluten-free fruit crisp using organic plums and apricots...

And the photo doesn't do it justice....looked much prettier piled high in a bowl topped with ice cream, but it looked too tasty to stop and take a picture. Leftovers in the pan just don't do it justice, but alas, you have a photo.

GLUTEN-FREE CRISP

One stick butter (you will actually use only about 3/5 to 3/4 of it)
1 c sugar (brown is best, I didn't have any and used white)
1/2 teaspoon cinnamon
dash nutmeg if desired
3 oz almonds sliced thin
two packets quaker oatmeal brown sugar maple flavor

grease a pie tin or slightly larger dish lightly with butter.
preheat oven to 350

cut fruit.

mix 1/2 c sugar, almonds, oats in a bowl. Oddly enough, if it smells good you don't need more sugar.
Cut almost all of the the butter in small pieces to form a strusel/crumb topping of sorts... due to the lack of flour it will not really crumb.

Mix fruit with remaining sugar (well, to taste depending on fruit's sweetness) and spices, place in pan.
Cover with crumb topping.
With the bit of remaining butter, melt it and drizzle over the top.

Cook about 45 min.

I also added a drip or two of almond extract to the fruit mix which is optional.

Serve with vanilla ice cream.

Even non gluten-phobics loved it.
