I made a good, mostly organic soup (only the spices were non-organic)
I kind of eyeballed things so here goes...
2 chicken breasts
pinch or two of smoked paprika
teeny dash of cayenne
salt and pepper
olive oil to just coat pan
2 onions (brown/yellow kind)
teaspoon to 2 teaspoons crushed garlic
1 bay leaf
pinch of white pepper
few good sprinkles of parsley and thyme
3 strips bacon
2 cans white beans
1.5 qt chicken stock
4 leaves of kale
Cube chicken, sprinkle with a little of the salt and pepper and all paprika and cayenne and saute in oil until cooked. Set aside.
Brown/ crisp bacon and set aside, retaining the grease. Saute onion and garlic in it. until softened. Add bay leaf, thyme, parsley, saute about 1 minute, add chicken and bacon back in, and then add the broth/stock and beans. Cook on simmer about an hour for flavors to meld. Add salt, pepper, white pepper to taste. Chop kale and add, cook until it is wilty and not crunchy. enjoy.
